This one is a little bit of a cheat. Stop by a grocery store and buy some already marinated chicken and stuffed jalapeños.
Chicken Breast (already marinated)
Stuffed Jalapeños wrapped in bacon
Vegetables to cook on pan (pick ones you like)
Sour Cream (optional)
Keep throwing whatever other toppings you love.
Fire up the grill and get those coals hot (this is the longest process).
After grill coals are hot, put some tin foil down over the grate and place your chicken and jalapeños on the grill. Don’t cook too long or your chicken will dry out. Once their is a nice golden brown on each side, pull the chicken off (cut open the thickest chicken to make sure the chicken is not raw in the middle). About 5 minutes before the chicken is done, put your vegetables (precut them) on the stove to cook in a pan.
Don’t they look great?
Cut the chicken into strips the size you would like. These are for street tacos, so your tacos should be small.
Voila! Nice little pieces of chicken. Your vegetables should be nice and cooked now and can be poured into a serving bowl.
Create a serving line so that kids can help themselves and create their own little tacos – our kids LOVE a buffet line set up.
Looks great and ready to eat. Enjoy!
