This is such an easy meal to make. Best part is that you can prepare the meal and leave it alone for several hours while you take care of other things around the house. I used part of the recipe from Family Fresh Meals.
1 Whole Chicken, insides removed and washed/patted dry
1/2 tbsp of Paprika
2 tbsp All Purpose Seasoning
1/2 tbsp Garlic Powder
1 tsp Salt
6 Red Potatoes
Cut the potatoes into quarters and chop up the onion. Toss into the crockpot and then throw in a couple handfuls of baby carrots.
Take the 1/2 tbsp of paprika, 2 tbsp all purpose seasoning, 1/2 tbsp garlic powder, and
1 tsp salt and pour them into a mixing bowl. Mix seasoning together.
Rub seasoning all over the entire chicken, including the inside. Place on top of vegetables. Cook on HIGH for 4 – 4 1/2 hours or LOW for 6 1/2 – 8 hours.
TIME TIP: You have at least 4 hours to take care of things around the house now. Here are the things I did during the time that you can do as well.
- Stripped the Master Bed and remade bed.
- Vacuumed Master Bedroom, Master Closet, 2 Kids rooms, hallway, dining room, and kitchen.
- Completed 3 loads of laundry, folded and put away.
- Reviewed kids school work and had them put away their laundry and clean their room to be vacuumed.
About 30 minutes before chicken was done, I made a side of zucchini. I sliced up 2 large zucchini’s, but found out later I should have quartered the zucchini instead.
I’m definitely in the learning process of cooking and some meals become experiment meals for me.
Poured in some avocado oil into a mixing bowl (I accidentally used to much), put in some salt, pepper, and crushed peppers. Toss in the cut up zucchini and mix together to coat all pieces.
Take zucchini’s and place in a cooking pan at medium heat. Let them cook for a few minutes until they are cooked on both sides. Try not to burn them.
Once chicken is done cooking, pull out of the crockpot and cut the chicken up. Place the zucchini and the cooked vegetables from the crockpot on the bottom of the plate. Place the cut chicken on top. Although the zucchini would have been better quartered and then cooked, this was still a really good meal. The potatoes and carrots were cooked just right and were so amazing to eat with everything.
