Yesterday, I made one of my go to breakfast meals that I have made for years. It’s a great meal for meal preps as well.
1 Yellow Onion
1 lb Sausage
32 oz Egg White Carton
Preheat stove to 350 degrees.
Chop the white onion into small pieces, toss in a pan with a spoonful of minced garlic. Cook until onion starts becoming clear.
Brown sausage until cooked all the way.
Scoop a spoonful of the sausage and onion into a muffin pan. Pour egg white over the sausage until it almost reaches the top of the pan. Toss in the oven for 25 minutes.
While the muffins are cooking, use the extra sausage and egg white to make yourself a plate of scrambled eggs with sausage. I had to toss in two extra eggs since the egg white was almost all gone. Enjoyed this with one of my favorite morning drinks, Chai Latte, in one of my favorite coffee mugs. Top with some Hot Sauce if you want extra heat.
TIP TIP: When you are done eating, wipe down the counters and start loading the dirty dishes.
Muffins should be done now. Let them cool for a couple minutes before serving or putting away. As I said earlier, this is one of my prep meals. If you make it on a Monday, you have the meal above, and for the next 4 days you have 3 muffins each. Great way to make sure to have breakfast each morning quick and easy. Microwave for 1 minute. Enjoy!
